Rolled fondant filling (for chocolate bon bons)
Rolled fondant can be used to make the
filling for many chocolate covered candies.
To make a basic rolled fondant, you will
need:
1 cup water 3 cups sugar 1/3 tsp cream of tartar 1 tsp vanilla or other flavoring (use clear
if you want white fondant) food coloring (optional)
candy thermometer
Bring the water
to a boil in a medium to large saucepan. Add the sugar and stir
continually until it dissolves in the water. Continue to cook
until it comes to a boil again. Add the cream of tartar and stir
it in (it may boil up to the top of the pan); then allow it to
continue to cook (without stirring any more) until the candy
thermometer reads 234 degrees.
Spray a marble
slab or a baking pan with cold water and pour the fondant onto
the cool surface. Allow it to cool for several minutes until it
holds a mark when you press the corner.
Use a firm
spatula or candy scraper to work the fondant toward the center,
mixing it until it turns white. Knead it until it is smooth. You
can add food coloring, flavoring (such as extracts or liqueurs)
or even bits of fruit or nuts.
Once you have
added your color and flavoring, you are ready to make your
fondant-filled chocolates.
