Sugar in the Raw: Chocolate
Chip Oatmeal Cookie Recipe
Ingredients
1 1/2 cups
all-purpose flour
1 cup quick
oats
1 tsp
baking soda
1/2 tsp
salt
1 cup
softened unsalted butter
3/4 cup
light brown sugar
3/4 cup
sugar in the raw
1 tbsp.
vanilla extract
2 eggs
2 1/2 cups
semisweet chocolate chips
Instructions
Blend the
dry ingredients (flour, oats, baking soda and salt) in a medium
sized bowl and set aside.
Cream the
butter with the sugar in the raw and brown sugar.
Add the
eggs and vanilla to the butter and sugar mixture and blend
thoroughly.
Gradually
add the dry ingredient mixture to the wet and mix until well
blended. Add the chocolate chips.
Drop by
teaspoonfuls onto a cookie sheet. Bake for 350 degrees F for
8-11 minutes or until the edges are light golden brown.
Note: for a
more delicate texture, place your oats in a blender and grind
them slightly before using in the recipe.
You may
also add one cup of chopped nuts if desired.
